Quick, healthy recipes for your office lunch - Number 1

Golden vegetable soup with pesto and seeds – Perfect for the cold!

Recipe developer, food stylist and food photographer Dianne Bibby, from Bibby’s Kitchen, is warming our soul with this hearty soup recipe…

Serves: 10

Prep time: 10 minutes

Cooking time: 45 minutes

Method

Heat 2 tablespoons olive oil and sauté 1 diced onion until soft. Stir in 1 minced garlic clove and cook for another minute.

To the onions, add 2 diced leeks, 3 diced stems of celery, 2 peeled carrots and sauté for 5 minutes.

Add 500g butternut chunks, 2 peeled orange sweet potatoes, 3 medium zucchinis’, half a head of broccoli and half a head of cauliflower, 800g tinned chopped tomatoes, 1 teaspoon of oregano, 1 de-stalked and chopped stem of fresh rosemary and ½ teaspoon of dried red chilli flakes.

Season with salt and pepper.

Pour in 1.75 litres of vegetable stock, cover partially with a lid and simmer for 40 minutes or until the vegetables are tender.

Transfer to a blender and blitz until smooth.

Return the soup to the pot and add 1 cup of milk. Heat through. Adjust the seasoning if necessary and add a little more milk if you prefer a thinner soup.

Swirl through 2 tablespoons of pesto and scatter with a handful of toasted pumpkin and sunflower seeds.

Sit back and enjoy with chunky toasted bread.
