Quick, healthy recipes for your office lunch – Spring Salad

Spring Salad – Perfect for a mood lift!

Cooking time: 20 minutes

Method

Add a teaspoon of coconut oil to a frying pan over a medium heat. Fry 200grams of halved asparagus for 2 – 3 minutes until the raw flavour is gone, but they still have some crunch.

Remove from heat and set aside.

In the same frying pan turn up the heat to a medium/high heat and toast 50 grams of walnuts for 5 minutes or until they start to turn golden brown.

Add 1 cup of fresh or frozen peas and ½ cup of edamame beans to individual bowls. Top up with boiling water and blanch for 5 minutes. Remove the water and set aside the peas and beans.

Mix 1 juiced lemon, 3-4 tablespoons of Olive Oil, 2 teaspoons of tahini, 1 teaspoon of honey, 1 teaspoon of balsamic and salt and pepper for taste, in a small bowl.

On a large salad plate start to assemble the salad. This salad is great in layers then topped with the dressing.

Start with a handful of baby lettuce leaves chopped bite size, 2 medium zucchinis made into ribbons with a vegetable peeler, 30 grams of rocket, the edamame beans, peas and asparagus.

Then add 6 thinly sliced radishes, 80 grams of Chevin Goats cheese (optional), the zest from one lemon and half a cup of toasted walnuts!

Top the salad with the dressing and serve!
