Having worked at game lodges around the Mpumalanga area, Chef Marnus joined the team at Clico as Sous Chef in 2015. The rest, as they say, is history. He grew up in the North West, in predominantly rural communities and fast learnt to use whatever he could get his hands on. He’s a big champion of using local farmers and products and supplies that are sourced and grown locally.
Of course, we asked him what the favourite thing about his job is. He loves seeing young talent being inspired. The students that work in the kitchen with him are thirsty for knowledge, and it’s a great feeling to help mould and form a young mind – like his once was. He adds that it’s important for the chefs of today to give back to the younger.
The team at Clico are 7 strong, and all cook and get involved in every aspect of the kitchen – not just ‘paper chefs’, they manage ordering of stock, menu creation and cook every single day. A chef should not go a day without picking up a knife, adds Chef Marnus.
They run the 36-seater restaurant and the conferencing area, as well as hotel guests breakfast service with precision – nothing is impossible for Chef Marnus and his team. The restaurant is known for its fine dining; innovative gourmet fare with an emphasis on seasonal, local and organic products.
