Cocktail of the week: Emilia Knight’s VerGin cocktail

We spoke to Emilia Knight of Appetite Knight for her go-to VerGin cocktail recipe, The Hot VerGin.

Makes: 2 cocktails

Ingredients:

1 teaspoon red chilli flakes (alternatively, one can use a small amount of fresh red chilli – deseeded)

1/2 lemon, rind and juice

Sprig of  fresh mint, 6-8 leaves

50 ml VerGin Limón non-alcoholic botanical spirits

Indian Tonic

Lemon rind (to garnish)

 Method:

Briefly bruise mint leaves, chilli, lemon rind and juice with a pestle & mortar.  Strain.

Fill the glasses with crushed ice;  divide the juice between the 2 glasses before adding 25 ml of VerGin Limon to each and top up with premium Tonic.

Garnish with lemon rind curls or thinly cut strips, and top with a sprig of mint.

Add freshly chopped chilli if you want to spice it up even more.
