Delicious giant chocolate muffins recipe

These are perfect for just about any occasion, Hello Joburgers. Be it for a ladies tea, spoiling the family on Saturday morning, or surprising that special person with breakfast in bed on Sunday morning – we are just crazy about these delicious giant chocolate muffins – recipe courtesy of the team at Royal baking Powder.

Giant Chocolate Muffins Recipe

Ingredients:

500 ml (2 cups) cake flour

15 ml (1tsp) Royal Baking Powder

3 ml (1/2 tsp) salt

125 caramel brown sugar

125g dark or milk chocolate

5g pecan nuts, coarsley chopped

2 extra large eggs

160 ml milk

5 ml vanilla essesance

125g margarine melted

Method

1 sift flour, Royal Baking Powder and salt together. Add sugar, chocolate and nuts and mix well

2 whisked eggs, milk and essance together. Add to dry ingridients with the melted butter and mix lightly with a spoon until just combined. Do not over mix, mixture should still be lumpy

3 spoon mixture into large greased muffin pans, filling each three-quarters full, sprinke chopped chocolate on top. Bake in a preheated oven at 200 C for about 25 minutes. Turn into a wire rack to cool. Serve as is. Nom nom!
