If gin is your thing then this super-trendy, ultra-cool cocktail bar situation inside a gin distillery is a definite must-visit! With star mixologist Gareth Wainwright as the captain of the ship and located inside the century-old warehouse in the 1 fox precinct we couldn’t help but head on over and bring back some stellar cocktail recipes.

Gareth began his cocktail career in 2004, at Salvatore’s Restaurant, deep in the West Rand of Johannesburg. He began studying the craft with great vigour and determination and later went on to join a mobile bar company that encouraged his passion for cocktails and spirits and allowed him more time to focus his craft. This put him in good stead and in 2012 he was approached by Brandhouse (Diageo) to lead a Mixology and Brand Ambassador program for the luxury portfolio in the Gauteng region. Going on to launch a bar and a Drinks agency he is now the Director of Beverages at The Little Fox.

KEEP PORTLAND WEIRD
60ml Aviation Gin
20ml Lemon Balm Cordial*
15ml Olive Brine
15ml Dry Vermouth
Combine all ingredients into a mixing glass and fill with hard ice. Stir until chilled and diluted and strain into a chilled coupette.

40ml Aviation Gin
25ml Cold Pressed Coffee
2 drops Absinthe
10ml 2:1 simple syrup
4 sprig mint
100ml Spicy Ginger Beer
Combine all ingredients except the ginger beer into a cocktail shaker and fill with hard ice. Shake hard. Strain the ingredients from the cocktail shaker. Remove the used ice from the cocktail shaker and pour the cocktail ingredients back into the shaker tin. Reseal the tin and shake without ice. Fill a chilled highball glass with ice and strain through a fine strainer over the ice. Garnish with tongue in cheek humour and/or a lemon zest.
