The Restauranteur of the month is Greg Nicolaou of Cilantros Restaurant & Bar.
A far cry from fast food and his potato peeling days, Greg Nicolaou is serving up urban contemporary cuisine in the hub of Sandton, at his eatery Cilantros in Nelson Mandela Square – together with Michael Yiallouris.
Hailing from a family of hosts with a passion for hospitality, Greg’s love of food and beverage was born behind the bar. He was serving drinks to crowds of over 400 people before he was old enough to frequent a bar himself! Under his industrious father at the Cypriot Club, Greg learnt the ropes of the restaurateur game and became hooked on the adrenalin rush.
Meaning coriander in Italian and Spanish, Cilantros presents patrons with a plethora of Mediterranean offerings, depending on their mood. From the Italian influence of pizza and pasta, to the Spanish style tapas and Portuguese selection of seafood. Cilantros is unique in the fact that their offering is not. Whether a taste tickles your fancy or you’re in pursuit of a plated feast, no order is too big or small.
Dedicated to superior service, Greg believes excellence should not be reserved for fine dining. His greatest reward as a Restaurateur, is powering through a pressured pass, and scanning the room to see satisfaction at every table. Teamwork makes the dream work, and is essential in the ingredients of a great kitchen. The synergy of a strong team is paramount.
He’d pay any price for special service, and would love the experience of being served by Gordon Ramsay. On local soil, you’ll find him at Mezepoli or Licorish Bistro. He’s also been known to make a mean burger and chips too, if that’s what you’re after.
